The coppa muscle on pork is referred to as the "Money Muscle" by many food experts for it's high intermuscular fat content, as well as the flavor and tenderness. We have taken the coppa, naturally cured in with our proprietary blend of spices, and hardwood smoked to perfection.
You can add your own glaze over top and roast this just like a holiday ham. It will knock your socks off!
